Description
Potassium sodium tartrate (CAS 304-59-6), commercially known as Rochelle salt or E337, is a double salt of tartaric acid used primarily as a buffering agent and sequestrant.
Its ability to stabilize pH and chelate metal ions makes it a functional ingredient in formulations where consistency and shelf stability are critical across food, pharmaceutical, and personal care manufacturing.
In food production, E337 functions as a stabilizer and emulsifying salt in processed cheese, where it controls texture and prevents fat separation during the manufacturing process.
