Calcium tartrate
Description
Calcium tartrate (CAS 3164-34-9), also known as E354, is the calcium salt of tartaric acid used as an acidulant and pH buffering agent in food and pharmaceutical manufacturing.
It occurs naturally as a byproduct of wine production and is also produced synthetically for commercial supply. In food processing, it functions as an acidity regulator in beverages and confectionery.
It is widely used in baked goods where controlled tartness and stable pH are required. Pharmaceutical manufacturers use it as an excipient in tablet formulations to maintain active ingredient stability.
Its buffering capacity is essential for high-quality medicinal products. It also serves as a calcium fortification source in functional food and nutraceutical products targeting mineral supplementation.
In winemaking, calcium tartrate is recovered and refined as a raw material feedstock for tartaric acid production. This versatile compound is supplied as a white crystalline powder or fine granules.
Food-grade material conforming to FCC specifications is the most commonly traded form. Pharmaceutical-grade material is also available to BP or Ph. Eur. standards for regulated applications.
