Description

Metatartaric acid (CAS 39469-81-3), also known as ditartaric acid and approved as E353, is a condensation product of tartaric acid used primarily as a stabilizing agent in food and beverage processing.

It functions by inhibiting tartrate crystal precipitation, protecting product clarity and shelf stability. In winemaking, it is added post-fermentation to prevent the formation of potassium bitartrate crystals.

These crystals would otherwise deposit as visible sediment in bottled wine. It is particularly valued in still wines and fruit wines where cold stabilization is impractical or cost-prohibitive for the producer.

In pharmaceutical formulations, it serves as a buffering and stabilizing agent in liquid preparations. This is essential where controlled acidity and inhibition of precipitation are required for the final product.

Beverage manufacturers also apply it in fruit-based drinks and juices to maintain visual clarity during storage and distribution. This ensures the product remains appealing to consumers throughout its shelf life.
