Isomalt
Description
Isomalt (CAS 64519-82-0), also known by its food additive designation E953, is a sugar alcohol derived from sucrose used as a bulk sweetener and sugar replacer in food manufacturing.
It delivers sweetness at roughly half the intensity of sucrose while contributing minimal impact on blood glucose, making it a preferred ingredient in reduced-sugar and diabetic-friendly product development.
In confectionery, isomalt is the industry standard for sugar-free hard candies, lollipops, and pulled sugar decorations due to its low hygroscopicity and high heat stability.
These properties allow clean molding and extended shelf life. Chewing gum, chocolate coatings, and compressed tablet confections use it as a bulk filler to replace sucrose without compromising texture or mouthfeel.
