Calcium sorbate
Description
Calcium sorbate (CAS 7492-55-9), also designated E203, is the calcium salt form of sorbic acid used as a broad-spectrum preservative across food, cosmetic, and pharmaceutical applications.
It inhibits the growth of mold, yeast, and bacteria, extending shelf life in moisture-sensitive and pH-neutral formulations where potassium sorbate may be less suitable for the specific application.
In food manufacturing, E203 is used to preserve baked goods, dairy products, and processed foods where a lower-sodium or lower-potassium preservative profile is required for the final product.
