Description
Calcium bromate (CAS 10102-75-7) is an inorganic calcium salt of bromic acid used industrially as an oxidizing agent. In food processing, it functions as a dough conditioner and flour treatment agent.
It works by strengthening gluten networks to improve bread volume and crumb structure. In commercial baking, it is applied as a flour improver to accelerate dough maturation and achieve consistent loaf height.
