Description
Potassium bromate (CAS 7758-01-2), also known as E924, is an inorganic oxidizing salt used commercially as a flour treatment agent and chemical oxidizer. It strengthens dough structure in baking and supports oxidation processes in industrial applications.
In commercial baking, E924 acts as a dough conditioner that improves gluten network development, resulting in greater loaf volume and a finer crumb structure in bread production. It is also evaluated as a flour bleaching and maturing agent.
