Description

Calcium disodium edetate hydrate (CAS 23411-34-9) is the hydrated crystalline form of calcium disodium EDTA, a chelating agent used across food and pharmaceutical manufacturing. It works by binding free metal ions that would otherwise catalyze oxidative degradation.

In food processing, it is incorporated into canned vegetables, legumes, mayonnaise, and salad dressings to prevent metal-catalyzed discoloration and rancidity. This extends shelf life without altering the flavor profile of the finished product.
