Description
Hexanal (CAS 66-25-1), also known as n-Caproaldehyde and carrying FEMA number 2557, is a short-chain aliphatic aldehyde used as a flavoring and fragrance ingredient.
It delivers a characteristic fresh, green, grassy note that underpins a broad range of consumer product formulations. In food and beverage flavoring, it contributes to the fresh, cut-grass character of fruit flavors.
This is particularly useful in apple, citrus, and tomato profiles where it is used at trace concentrations to enhance naturalness. Fragrance compounders incorporate it into fine fragrance and functional fragrance bases.
