Gluconolactone
Description
Gluconolactone (CAS 90-80-2), also known as GDL and E575, is a naturally derived lactone used commercially as a slow-release acidulant and mild humectant across food and personal care markets.
Unlike fast-acting acids, it hydrolyzes gradually in aqueous systems, giving formulators precise control over pH reduction without sharp sensory impact. In food manufacturing, GDL is used to acidify tofu and processed meats.
It triggers protein coagulation without requiring heat or starter cultures in dairy analogues. Baked goods and ready-meal formulations use it as a leavening acid in combination with sodium bicarbonate for better results.
Its slow release improves texture and crumb structure in various bakery applications. In personal care, GDL functions as a mild exfoliant and pH adjuster in leave-on skincare products, particularly serums and toners.
These products often target skin renewal through gentle acidification. Cured and fermented meat products rely on it to lower pH rapidly during processing, improving food safety and slice firmness across the production line.
Gluconolactone is supplied as a white crystalline powder in food-grade and cosmetic-grade specifications. FCC and E575-compliant grades are standard for food applications to ensure high safety standards.
High-purity grades meeting cosmetic industry requirements are also commercially available for specialized formulations. Bulk supply is typically offered in 25 kg bags, with packaging suited to moisture-sensitive handling.
