Natamycin
Description
Natamycin (CAS 7681-93-8), also known as E235, is a naturally derived antifungal agent produced by fermentation of Streptomyces natalensis. It is used across food, pharmaceutical, and personal care industries primarily to inhibit mold and yeast growth.
This versatile compound works effectively without affecting bacteria or altering the sensory characteristics of the end product. In food manufacturing, it is applied as a surface treatment on hard and semi-hard cheeses and dry-cured meats.
It is also utilized in bakery products to extend shelf life by preventing fungal spoilage. Pharmaceutical formulators incorporate the material into ophthalmic suspensions for the treatment of fungal keratitis, where it functions as the active ingredient.
In personal care and cosmetic formulations, it serves as a preservation booster, replacing or reducing synthetic preservatives in products such as creams and lotions. Beverage producers also use it to control yeast contamination in wine.
This application is particularly useful in fruit-based drinks as it does not impact fermentation profiles. The product is supplied as a fine white to cream-colored powder, typically in concentrations of 50 percent active content.
The material is often blended with lactose or glucose as a carrier for ease of use. Food-grade material is available to FCC specifications, ensuring high purity and safety for various industrial applications and consumer goods.
