Phytic acid

Phytic acid (CAS 83-86-3), also known as IP6 and carrying the food additive designation E391, is a naturally derived phosphoric acid ester extracted primarily from cereal grains and legumes. It functions as a chelating and sequestering agent, binding metal ions to prevent oxidative degradation. In food manufacturing, phytic acid controls metal-catalyzed rancidity and discoloration in oils, fats, and processed grain products where trace mineral contamination accelerates spoilage.
