Description
Phytic acid (CAS 83-86-3), also known as IP6 and carrying the food additive designation E391, is a naturally derived phosphoric acid ester extracted primarily from cereal grains and legumes. It functions as a chelating and sequestering agent, binding metal ions to prevent oxidative degradation.
In food manufacturing, phytic acid controls metal-catalyzed rancidity and discoloration in oils, fats, and processed grain products where trace mineral contamination accelerates spoilage. This ensures product stability and maintains sensory profiles over time.
Personal care formulators incorporate it into anti-aging and skin-brightening products, where its metal-chelating action inhibits melanin synthesis pathways triggered by copper-dependent enzymes. It is a versatile ingredient for high-end cosmetic applications.
